My favorite all time irresistible food group is Mexican. I love the textures and flavors of the dishes, love watching Rick Bayless on PBS and love the culture of the people. When Rick starts describing the way he cooks close to the culture, my heart goes all swoony. Over the course of my life I have shared many meals in the local Mexican joints, with the colorful carved chairs, a pitcher of margaritas and fun times with friends.
When was it when my body betrayed me? Who can remember…. All I know is one day I could handle all that gooey richness, the next I couldn’t. So when I share this Tortilla Soup recipe with you, please know that it is not only delicious (and healthy), this soup can take you back to those colorful carved chairs too. Enjoy! Viva La Mexico!

Tortilla Soup
1 cup sweet onion, minced
4 diced garlic cloves
1 teaspoon chilli powder (rounded for my family)
1 teaspoon dried oregano (try to find Mexican Oregano)
2 teaspoons ground cumin
4 cups vegetable broth
1 15oz can fire roasted diced tomatoes
1 4oz can diced green chilies, drained
¼ cup ketchup
2 tablespoons Braggs Amino Acids
In a soup pot add the onions with a splash of water (you can use oil if you prefer), cook over medium heat for 2 minutes. Add garlic and continue to cook until onion is translucent
Add chili powder, oregano, and cumin, stirring to cover onion and garlic with spices
Add broth, tomatoes with their juices and drained chilies, stirring to combine
Bring to a boil, then cover and simmer over low heat for 15 minutes
Transfer half of the mixture and blend until smooth (or use a submersion blender), add back into the soup pot. Serve.

Corn Tortillas
Black Beans, drained
Cooked rice
Shredded chicken
Cilantro
Avocado
Radish, thinly sliced
Green Onions
Jalapenos, sliced
Green salsa
Sour cream (Dairy free options are good)
Shredded cheese
